Chicken pot pie Ingredients:
- 1 pound skinless, boneless chicken breast halves – cubed
- 1 cup sliced carrots
- 1 cup frozen green peas
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon celery seed
- 1 ¾ cups chicken broth
- ⅔ cup milk
- 2 (9 inch) unbaked pie crusts
- ½ cup sliced celery
- ⅓ cup butter
- ⅓ cup chopped onion
- ⅓ cup all-purpose flour
Preparation method:
First, gather all the ingredients, preheat the oven to 425 degrees F (220 degrees C).
Then, in a pan mix the carrots, chicken, peas and celery, put the water until it covers and let it boil. Now let it boil for about 15 minutes, remove from heat and drain.
Then, while the chicken is cooking, in another pan over medium heat, melt the butter. Add onion and cook until soft and translucent, about 5 to 7 minutes. Let’s now mix the salt, flour, pepper and celery seed
Mix well by slowly stirring the chicken broth and milk.
Then lower the heat to medium-low and simmer until thickened, about 5 to 10 minutes. We will remove from the fire and reserve.
Then place the vegetables and chicken in the bottom pie crust. On top, pour the hot liquid mixture.
Soon after, cover with the top crust, seal the edges and cut off the excess dough. We’re going to make several small cuts in the top crust to allow steam to escape.
Finally, bake in the preheated oven until the crust is golden brown and the filling is bubbly, approximately 30 to 35 minutes. Then, before serving, let it cool for about 10 minutes.
It is ready to serve immediately.
