Capirotada Mexicana Ingredients:
- 3 cups of water
- 3 cups brown sugar, divided
- 2 cups butter, softened
- ⅛ tsp ground cloves or to taste
- 2 cups of peanuts
- 1 pound shredded sharp cheddar cheese
- ¼ teaspoon ground cinnamon, or to taste
- 2 cups of raisins
- ¼ teaspoon ground nutmeg or to taste
- 2 sliced loaves of white bread, toasted
- 2 cinnamon sticks
Method of preparation:
First preheat the oven to 350 degrees F (175 degrees C).
After that combine water, 2 cups of brown sugar and cinnamon sticks in a pan; bring to a boil. After that, reduce the heat and cook, stirring occasionally, until the sugar dissolves and the liquid reduces to a syrup, about 15 minutes. Then remove the cinnamon sticks from the syrup using a slotted spoon.
After that spread butter on each slice of toasted bread. After that make 1 layer of bread with butter in a deep casserole or in a pan that can go into the oven. After that sprinkle cinnamon, nutmeg and cloves over the bread layer. Finally sprinkle 1/4 of the raisins, 1/4 of the peanuts, 1/4 of the remaining brown sugar and 1/4 of the Cheddar cheese over the bread layer. Then repeat the layers with the remaining ingredients. Now pour the cinnamon syrup over the entire dish; cover with foil.
