Delicious Alfajores, perfect for your dessert, everyone will like it, a very easy and delicious recipe to be made at home with few ingredients.

Alfajores Ingredients:

  • 150g unsalted butter, at room temperature
  • 200g regular white sugar
  • 2 egg yolks, at room temperature
  • 1 egg, at room temperature
  • 1 tablespoon brandy
  • 140g wheat flour
  • 250g of corn starch
  • ½ teaspoon baking powder
  • pinch of salt
  • A few drops of vanilla extract
  • Zest of ⅓ lemon
  • 1 cup of Dulce de Leche
  • Unsweetened shredded coconut, for garnish (optional)

Method of preparation:

We will start by putting the butter and sugar in a large bowl and mixing until very creamy using a spatula or hand mixer or a wooden spoon. Then put the yolks and the whole egg and mix well to embed.

Then add the brandy, vanilla and lemon zest. Let’s mix it up really well.

Soon after, add the sifted flour, baking powder, salt and cornstarch little by little, mixing very well until there are no traces of dry ingredients left. Now when the finished dough will be very soft and silky but not sticky.

We will put it in a disk, wrap the dough in plastic wrap or freezer sheets and let it rest in the fridge for approximately 30 minutes, like any sweet dough.

right after heating the oven to 170ºC / 325ºF.

Then, with a floured surface, roll the dough ½ cm thick. After that using a round cookie cutter, cut circles and place them on a greased baking sheet or use a Silpat. They tend to stick when using parchment paper, but all papers are different depending on where you live. When thickness and size is totally up to you; I advise you to try different combinations and see which one works best for your taste.

Gather the leftovers, roll them up again and cut more alfajores cookies until you use all the dough.

Then put it to bake for 10-12 minutes or until it starts to blush. then let it cool completely on a wire rack. After that, put a spoonful of dulce de leche and fill a round, with the smooth side up. Lightly press down with another round, flat side down forming the alfajores.

Finally, with the back of a small spoon, clean up any dulce de leche that has spilled over. This will leave a path for the coconut to stick to. Finish by placing the unsweetened coconut on a small plate and rolling the alfajores so they are evenly coated. If you want, you can leave the sides smooth.
