Banana Muffin Ingredients:

1 ½ cups wheat flour
1 teaspoon powdered yeast
½ teaspoon of salt
3 large mashed bananas
¾ cup white sugar
1 egg
⅓ cup butter, melted
1 teaspoon of bicarbonate of soda

Method of preparation:

First preheat the oven to 350 degrees F (175 degrees C). then grease a 12-cup muffin tin or paper cups. After that sift the flour, baking powder, bicarbonate and salt together in a bowl; set aside.

Then mix the bananas, sugar, egg and melted butter in a separate large bowl until well blended; fold in flour mixture until smooth. After that put the dough in the prepared muffin tins, filling 2/3 of each.

Finally bake in the preheated oven until the tops spring back when lightly pressed, about 25 to 30 minutes. Then allow to cool briefly in the pan, then transfer to a wire rack to cool completely.
