Breakfast burritos with very tasty chorizo

Chorizo Breakfast Burritos Ingredients:

cooking spray
¾ pound chorizo sausage, guts removed and crumbled
½ cup chopped red onion
1 green chili pepper, seeded and diced
4 large eggs
4 flour tortillas
1 cup shredded cheddar cheese

Preparation method:

First coat a large skillet generously with cooking spray. After that cook and stir the chorizo in the prepared pan over medium-high heat until browned and crumbled. After that, put the onion and chili pepper; continue cooking, stirring occasionally, until the onion is soft.

After that beat the eggs in a medium bowl and add to the chorizo mixture. After that reduce the heat to medium-low; continue cooking and stirring until the eggs are scrambled and no longer runny.

Then heat the flour tortillas in the microwave for 30 seconds. Finally place the chorizo and egg mixture in the middle of each tortilla and top with shredded cheddar cheese. Roll up like a burrito.
