Carrot cake recipe Ingredients:
Cake:
- 2 cups white sugar
- 3 cups grated carrots
- 1 cup chopped pecans
- 1 ¼ cups vegetable oil
- 4 eggs
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- ½ teaspoon salt
Frosting:
- 4 cups confectioners’ sugar
- ½ cup butter, softened
- 8 ounces cream cheese, softened
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
Preparation method:
First, let the oven preheat to 350 degrees F (175 degrees C). Now, in a 9×13 inch baking pan, let’s grease and flour it.
Then in a large bowl with a mixer, electric, beat the oil, sugar, eggs and 2 teaspoons vanilla until well blended. Stir in the baking soda, flour, baking powder, salt and cinnamon. Now add the carrots. Also add the pecans. Now pour into the prepared pan.
Then place in the already preheated oven for about 40 minutes, when you insert a toothpick in the center of the cake comes out clean is ready. Then let it cool in the pan for about 10 minutes, and after that place it on a rack and let it cool completely.
To make the Topping:
We will, use a large bowl with an electric mixer, beat the butter, icing sugar, cream cheese and 1 teaspoon vanilla until smooth and creamy. Finish by adding the chopped pecans. Finally, cover the cooled cake.
