Carrot Pineapple Cake Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon vanilla extract
  • 2 cups shredded carrots
  • 1 cup flaked coconut
  • 1 cup chopped walnuts
  • 1 (8 ounce) can crushed pineapple, drained
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 ¾ cups white sugar
  • 1 cup vegetable oil
  • 3 large eggs

Frosting:

  • 1 (8 ounce) package cream cheese
  • ¼ cup butter, softened
  • 2 cups confectioners’ sugar

Preparation method:

First, with the oven preheated to 350 degrees F (175 degrees C). Using a 9×13-inch spring form pan, grease and flour.

To make the cake:

We will, mix the cinnamon, baking soda, flour, baking powder and salt in a large bowl.

Then make a hole in the center and add the sugar, oil, eggs and vanilla. With a wooden spoon, mix well until smooth. Add the coconut, carrots, pineapples and walnuts. In the prepared pan, place the dough.

Finally, bake in a preheated oven until a toothpick inserted in the center comes out clean, approximately 45 minutes. Then wait for the cake to cool completely before covering.
(When cool and normal, the center of the cake will sink a little.)

To make the cover:

First, in a bowl, beat the cream cheese and butter until smooth. Add the icing sugar, now beat until creamy.
