Start by melting the butter in a Dutch oven over medium heat. Now add the carrots, onion, potato and celery, then stir in the chicken stock and ginger.
Then cover and cook, stirring occasionally, until the vegetables are tender, which should take about 30 minutes. Now, when it’s ready, uncover and leave to cool for 15 minutes.
Then transfer the soup in batches to a food processor and blend until smooth.
Finally, return the blended soup to the Dutch oven and incorporate the cream, curry powder, salt and pepper. Then simmer until the soup is heated through, usually about 10 minutes.
