Chicken in the Pot Ingredients:
- ¾ cup chicken broth
- ⅛ teaspoon salt
- 1 clove garlic, minced
- 4 boneless, skinless chicken breast halves
- 1 ½ tablespoons tomato paste
- ¼ teaspoon ground black pepper
- ½ teaspoon dried oregano
- 3 tablespoons dry bread crumbs
- 2 teaspoons olive oil
- 2 cups fresh sliced mushrooms
Preparation method:
First, using a medium bowl, combine stock, tomato paste, oregano, salt, ground black pepper and garlic. Mix well and book.
Then, coat the chicken with breadcrumbs, covering it well. Now, using a large skillet, heat the oil over medium high heat. Sauté the chicken in the oil for about 2 minutes on each side, or until lightly browned.
Then add the reserved stock mixture and mushrooms to the skillet and bring to a boil. Then reduce the heat to low, and cook for about 20 minutes, covered. Now remove the chicken and set it aside, covering it to keep it warm.
Finally, bring the stock mixture to a boil and cook for approximately 4 minutes, or until reduced to the desired thickness. Finish with the sauce spreading over the chicken and serve.
