Pie Ingredients:

Crust:

  • 4 tbsp melted butter
  • 3/4 c. graham cracker crumbs
  • 2 tbsp brown sugar
  • 1/4 c. granulated sugar

Filling:

  • 3/4 c. granulated sugar
  • 8 oz. cream cheese softened
  • 1 tbsp vanilla
  • 1 c. creamy peanut butter
  • 1 1/2 c. heavy cream
  • 1 c. mini chocolate chips

Preparation method:

First let’s prepare the crust. In a bowl, mix the graham cracker crumbs, granulated sugar, brown sugar and melted butter. Then mix well until well combined. Press this mixture firmly into the bottom of a 9-inch tart pan, making sure it covers the entire surface of the bottom. Gently press the crumbs about 5 cm up the sides of the pie dish. Place the pie crust in the freezer during this time.

Then whip 1 1/2 cups of cream until stiff peaks form. Store the whipped cream in the fridge while you proceed to the next steps.

Then, using a large bowl, beat the cream cheese until smooth and creamy. Add the sugar and mix until completely incorporated. Incorporate the peanut butter and vanilla, stirring well and scraping down the sides of the bowl as necessary.

Next, gently mix the whipped cream with the peanut butter mixture until smooth. Add the mini chocolate chips and mix gently, making sure they are evenly distributed throughout the filling.

Then pour the peanut butter and chocolate chip filling into the prepared crust, spreading it out evenly. Place the pie in the freezer until it is firm and holds its shape.

Finally, depending on the desired consistency, there are two ways to serve the pie. So if you plan to serve it more than half an hour later, keep it in the freezer. Now, to get a frozen, ice cream-like texture, defrost the pie for about 20 minutes before serving. Alternatively, for a softer, more viscous texture, thaw the pie for longer in the fridge.
