Cherry Almond Mousse Pie Ingredients:

  • 1 can (14 ounces) sweetened condensed milk, divided
  • 1 ounce unsweetened chocolate
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup cold water
  • 1/2 teaspoon almond extract, divided
  • 1 frozen pie shell (9 inches), baked
  • 1 jar (10 ounces) maraschino cherries, drained
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 cup heavy whipping cream, whipped
  • 1/2 cup chopped toasted almonds
  • Chopped chocolate, optional

Preparation method:

In a small saucepan, place 1/2 cup of milk and the chocolate, and cook and stir over low heat until the chocolate is fully melted, and the mixture has thickened, which should take about 4 minutes. Stir in 1/4 teaspoon of extract. Once combined, pour the mixture into the pie shell and set it aside.

Save eight whole cherries for garnish, and chop the remaining cherries, setting them aside. In a large bowl, beat the cream cheese until fluffy. Gradually incorporate the water and the remaining milk. Beat in the pudding mix and the remaining extract. Fold in the whipped cream, and then stir in the chopped cherries and almonds.

Pour the mixture over the pie in the shell. Place the pie in the refrigerator and chill it for approximately 4 hours, or until it is set. Once set, garnish the pie with the reserved whole cherries and, if desired, some chopped chocolate.
