Chicken Pot Pie Ingredients:

  • 3 skinless boneless chicken breasts
  • 1 tablespoon olive oil
  • 3 cups diced potatoes
  • 1 cup diced carrots
  • 1/2 cup sliced celery
  • 1 medium onion chopped
  • 2 cloves garlic chopped
  • 1 cup chicken stock or broth
  • 1 (15-ounce) can English peas rinsed and drained
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 recipe Southern Buttermilk Biscuits

Method of preparation:

We will start by preheating the oven to 475º F.

Then cut the chicken into 1-inch pieces. Now drizzle olive oil into a large, heavy-bottomed Dutch oven over medium heat. add the chicken and cook until lightly browned and no longer pink. Remove from Dutch oven to a bowl using a slotted spoon. Set it aside.

Then add potatoes, carrots, celery, onion, garlic and chicken stock to the Dutch oven. Let’s move consistently. Now cook until potatoes and carrots are soft. Reduce the heat to medium-low and add the chicken back.

Next, we’ll melt the butter in a 3-quart saucepan over medium-low heat. Whisk the flour until smooth, then slowly pour in the milk, stirring constantly. Remove from heat and add salt and pepper. Place in Dutch oven with chicken and vegetables. Add the peas, stirring until well combined. Pour into a 9×13 baking dish and set aside.

Next, prepare the Southern Buttermilk Biscuits and place on top of the Chicken Pie Mix in the baking pan. Sprinkle with freshly ground black pepper over the biscuits.

Lastly, bake for approximately 12 to 15 minutes until the cookies are golden brown and cooked through.

Finish removing from the oven and let it rest for about 3 minutes. Serve it hot.
