Cream of Mushroom Soup Ingredients:

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 5 cups sliced fresh mushrooms
  • 1 ½ cups chicken broth
  • ½ cup chopped onion
  • ⅛ teaspoon dried thyme
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup half-and-half
  • 1 tablespoon sherry

Preparation method:

First cook the mushrooms, broth, onion and thyme in a large heavy pot for 10 to 15 minutes, until the vegetables are tender.

After that, carefully shift the hot mixture into a blender or food processor. Then cover and hold the cap with a taker; pulse until creamy but still with a few vegetable bits.

After that, melt the butter in the same pan. Then beat the flour until smooth. Then beat in salt and pepper. Then slowly whisk in the half-and-half mushroom mixture.

After that, bring the soup to a boil and cook, stirring constantly, until it thickens.

Finally, add the sherry. After that, taste and season with salt and pepper, if necessary.
