• 2 tablespoons butter
• 1 medium carrot, chopped
• 2 medium potatoes, cubed
• 1 medium butternut squash – peeled, seeded, and cubed
• 1 (32 fluid ounce) container chicken stock
• salt and freshly ground black pepper to taste

Preparation method:

Then in a large pot over medium heat melt the butter and cook the onion, carrot, celery, potatoes and squash until lightly browned, about 5 minutes. Then add enough chicken stock to cover the vegetables.

Finally, bring to a boil over medium high heat. Then let’s reduce the heat to low, cover the pan and cook until all the vegetables are soft, for approximately 40 minutes.
