Fluffy Ingredients:

  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups dry lentils
  • 8 cups water
  • ¼ cup olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, chopped
  • 1 (14.5 ounce) can crushed tomatoes
  • ½ cup spinach, rinsed and thinly sliced
  • 2 tablespoons vinegar
  • salt to taste
  • ground black pepper to taste

Preparation method:

First heat the oil in a large pan over medium heat. After that put the onion, carrot and celery; and let it cook, then stir until the onion is soft, 3 to 5 minutes.

After that add the garlic, the bay leaf, the oregano and the basil; cook for 2 minutes.

Then mix the lentils and add the water and tomatoes. After that bring to a boil. Then turn the heat to low and simmer until the lentils are tender, at least 1 hour.

Then after it’s ready to serve, stir in the spinach and cook until wilted.

Finally add the vinegar and season with salt and pepper, taste and adjust the seasoning if necessary.
