Carrot cake Ingredients:

  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup crushed pineapple, drained
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 6 cups grated carrots
  • 1 cup brown sugar
  • 1 cup raisins
  • 1 teaspoon salt
  • 4 teaspoons ground cinnamon
  • 1 cup chopped walnuts
  • 4 eggs
  • 1 1/2 cups white sugar

Preparation method:

First, using a medium-sized bowl, mix together the grated carrots and brown sugar. Now let the mixture stand for about 60 minutes and then incorporate the raisins.

Then preheat your oven to 350 degrees F (175 degrees C). Let’s prepare two 10-inch cake pans by greasing and dusting them with flour.

Next, in a large bowl, beat the eggs until they have a light texture. Gradually add the white sugar, oil and vanilla and continue whisking. Then add the pineapple. Now, in a separate bowl, mix the flour, baking soda, salt and cinnamon. Incorporate this dry mixture into the wet mixture until completely combined.

Finally, add the carrot mixture and the walnuts, stirring to combine. Pour the batter evenly into the prepared tins.

Finish by placing the tins in the preheated oven and bake for about 45 to 50 minutes, or until a toothpick inserted into the cakes comes out clean. Leave the cakes to cool for about 10 minutes before removing them from the tins. When they are completely cooled, apply a layer of cream cheese icing to cover the cakes.
