Potato Salad Ingredients:

  • 3 cups diced peeled potatoes
  • 4 slices bacon
  • 1 small onion, diced
  • 2 tablespoons water
  • 1 ½ tablespoons white sugar, or more to taste
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon salt
  • ⅛ teaspoon ground black pepper
  • ¼ cup white vinegar

Preparation method:

First, start by placing the potatoes in a large pot and adding enough water to cover them by at least 1 to 2 inches. Bring the water to a boil and cook the potatoes until they are easily pierced with a fork, which should take approximately 10 minutes. Then when they are cooked, drain the potatoes and let them cool.

While the potatoes are cooking, take a large, deep skillet and cook the bacon over medium-high heat. Fry the bacon for about 10 to 12 minutes, turning as needed, until it turns golden brown and becomes crispy. Place the cooked bacon on a plate lined with paper towels and let it crumble when it has cooled down. Remember to reserve the bacon fat in the skillet.

In the same skillet with the bacon fat, cook the onion over medium heat until it turns golden brown, which should take around 6 to 8 minutes. Now, it’s time to add the sugar, vinegar, salt, water, salt, and pepper to the skillet and let it come to a boil.

Once the mixture is boiling, add the cooked potatoes and half of the crumbled bacon to the skillet. Cook the ingredients together until they are heated through, which should take approximately 3 to 4 minutes.

To finish, transfer the warm potato salad onto a platter and sprinkle the remaining bacon on top. Finally, garnish the dish with parsley. It is now ready to be served immediately.
