Grandma’s Rosemary Dinner Rolls Ingredients:

  • 1 package (1/4 ounce) active dry yeast
  • 1/4 cup warm water (110° to 115°)
  • 3 cups bread flour
  • 2 tablespoons sugar
  • 1 tablespoon minced fresh rosemary, divided
  • 3/4 teaspoon salt
  • 2/3 cup warm 2% milk (110° to 115°)
  • 1 large egg, room temperature
  • 1/4 to 1/3 cup canola oil

Egg Wash:

  • 1 large egg yolk
  • 2 tablespoons 2% milk

Preparation method:

First, using a small bowl, dissolve the yeast in warm water. In a food processor, combine flour, sugar, 2 teaspoons rosemary and salt. Pulse until well blended. Add warm milk, egg, and yeast mixture. Cover and pulse 10 times or until ingredients are almost blended.

Then, while processing, add oil little by little until the dough starts to pull away from the sides and forms a ball. Process for another 2 minutes to knead the dough (the dough will be very soft).

Then transfer the dough to a greased bowl, turning it once to grease the top. Cover and let rise in a warm place until doubled in size, about 1 hour.

Punch the dough and turn it out onto a lightly floured surface. Divide and shape into 12 balls. Wrap each ball in a 15-inch rope. Starting at one end, loosely roll the dough around itself to form a coil. Fold the tip under and pinch to seal.

Place coils 2 inches apart on greased baking sheets. Cover and let rise until doubled in size, about 30 minutes.

Finally, for the egg wash, combine the yolk and milk in a small bowl. Brush this mixture over the rolls. Sprinkle the remaining rosemary on top. Bake at 350 °F until the rolls are golden brown, which usually takes 18 to 22 minutes. Once baked, remove the rolls from the molds and transfer them to a wire rack. Serve them hot.
