Green Goddess Salad Ingredients:

For the salad

  • 3 mini cucumbers, chopped
  • 5 scallions (green onions), trimmed and sliced
  • 4 cups finely chopped green cabbage

For the dressing

  • 2 cloves garlic, peeled
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons rice vinegar
  • ¼ cup nuts (walnuts, cashews, almonds, etc.)
  • 1 cup fresh basil
  • 1 cup baby spinach
  • 2 tablespoons nutritional yeast
  • salt and freshly ground black pepper to taste
  • 1 shallot, peeled
  • ¼ cup lemon juice
  • ¼ cup chives

Preparation method:

First start by placing the cabbage, cucumbers and green onions in a large bowl. After that, leave it aside.

Then place the garlic, shallots, lemon juice, chives, oil, vinegar, walnuts, basil, spinach and yeast in the bowl of a food processor and process, scraping down the sides occasionally, until homogeneous, about 1 minute.

Finally pour the sauce over the cabbage and mix well. After that season with salt and pepper to taste.
