Mac and Cheese Ingredients:

  • 2 ½ cups milk, or more as needed
  • 2 cups shredded sharp Cheddar cheese
  • ½ cup finely grated Parmesan cheese
  • 8 ounces uncooked elbow macaroni
  • ¼ cup salted butter
  • 3 tablespoons all-purpose flour
  • salt and ground black pepper to taste (Optional)

Preparation method:

First heat the oven to 350 degrees F. After that grease an 8 inch square baking dish.

Next, make the macaroni and cheese: bring a large pot of lightly salted water to a boil. Then add the noodles and cook, stirring occasionally, until tender but firm to the bite, about 8 minutes. Drain and transfer to the prepared baking sheet.

Then while the pasta is cooking, melt 1/4 cup butter in a medium skillet over low heat. After that beat in the flour and stir until the mixture is pasty and light golden brown, 3 to 5 minutes.

Then gradually whisk 2 1/2 cups of milk into the flour mixture and bring to a boil. Then add the grated cheddar and finely grated Parmesan cheese; Then season with salt and pepper. Then cook and stir over low heat until the cheese is melted and the sauce is thickened, 3 to 5 minutes, adding an additional 1/2 cup of milk if needed. Finally, pour the cheese sauce over the macaroni and stir until well incorporated.

After that make breadcrumb topping: First melt 2 tablespoons of butter in a skillet over medium heat. After that put breadcrumbs; cook and stir until well coated and golden. After that spread the breadcrumbs over the macaroni and cheese and sprinkle with paprika.

Finally, bake in the preheated oven until the topping is golden brown and the macaroni and cheese is bubbling, about 30 minutes.
