Homemade fudge pops Ingredients:

  • 1/2 cup unsweetened cocoa powder (natural or Dutch-processed)
  • 1/2 cup granulated sugar
  • 2 cups dairy or non-dairy milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1/4 teaspoon kosher salt

Preparation method:

First, combine the dry ingredients. In a medium saucepan, combine 1/2 cup cocoa powder, 1/2 cup granulated sugar, 1 tablespoon cornstarch, and 1/4 teaspoon kosher salt. Whisk the ingredients to combine, making sure to break up any lumps.

Add the milk. Slowly add 1/2 cup milk or non-dairy milk to dry mixture, beating until smooth. Then whisk in the remaining 1 1/2 cups of milk until smooth.

Cook until thickened. Place the mixture over medium heat and bring to a boil, stirring constantly with a rubber spatula to prevent the milk from burning.

Soon after, cook until the mixture thickens and coats the back of the spatula, similar to the consistency of chocolate sauce. This usually takes about 1 minute. Remove pan from heat and add 1/2 teaspoon vanilla extract.

Then let the mixture cool, stirring occasionally, for approximately 5 minutes. As it cools, the mixture will continue to thicken and become similar to warm pudding.

Then we will divide and freeze. Divide the mixture between 8 popsicle molds, each holding 2 to 2.25 ounces. Insert a popsicle stick into each mold and place in the freezer until completely solid, which usually takes at least 6 hours.

Finally, unmold and serve. To unmold and serve, run cold water over the popsicle molds. This will help loosen them up.

Note: Popsicles can be frozen for up to 3 weeks.
