Ingredients for Instant Lasagna Soup:
1 (4 oz) light Italian sausage, without the wrapper
1 (32 oz) can low sodium chicken broth
24 ounces marinara sauce
8 lasagna noodles, broken into pieces
½ teaspoon of salt
6 teaspoons grated parmesan cheese
1 cup finely chopped onion
1 tablespoon olive oil
½ teaspoon freshly ground black pepper
1 tablespoon garlic, minced
1 pound of ground sirloin
method of preparation:
first switch on a multifunctional pressure cooker (such as the Instant Pot) and select the Sauté function. After that, add the sausage and ground beef to the pan and cook until golden, about 5 minutes. Drain and discard the fat and reserve the meat. Then add the oil and swirl to ensure the bottom of the pan is evenly coated. Now add the onion and cook until soft but not brown, about 5 minutes. Then add the garlic and cook until fragrant, about 1 minute.
After that pour in the chicken stock and deglaze the pan, scraping up any brown bits from the bottom. Then pour in the marinara sauce. Then add the meat mixture and season with salt and pepper. Now stir to combine. Then add the lasagna noodles, making sure they are completely submerged in the sauce. Close and lock the lid. Then select high pressure according to the manufacturer’s instructions; set the timer to 3 minutes. After that wait 10 to 15 minutes for the pressure to build up.
Then carefully release the pressure using the quick release method according to the manufacturer’s instructions, about 5 minutes. After that unlock and remove the cover. Finally taste and adjust the salt if necessary. After that place in bowls and top each with 1 teaspoon of Parmesan cheese.
