Pineapple upside down cake Ingredients:

  • ½ cup butter
  • 1 cup packed light brown sugar
  • 1 (20 ounce) can sliced pineapple
  • ¼ teaspoon salt
  • 4 large eggs
  • 1 cup white sugar
  • 1 tablespoon butter, melted
  • 1 teaspoon almond extract
  • 10 maraschino cherries, halved
  • 1 cup sifted cake flour
  • 1 teaspoon baking powder

Preparation method:

We will begin by preheating the oven to 325 degrees F (165 degrees C).

Next, melt 1/2 cup of butter over low heat in a heavy 10-inch skillet with a heat-resistant handle or a cast-iron pan. Remove from heat and evenly spread the brown sugar in the skillet. Arrange the pineapple slices to cover the bottom of the skillet, and distribute the cherries around the pineapples. Set aside.

Then in a bowl, sift the flour, baking powder and salt, set aside. Now, separate the eggs, placing the whites in a large bowl and the yolks in a smaller bowl.

Using a mixer on medium speed, beat the egg whites until soft peaks form. Gradually add the white sugar, beating well after each addition, until you achieve medium peaks.

In another bowl, beat the egg yolks on high speed until they become very thick and yellow. Gently fold the yolks and flour mixture into the whites using a rubber spatula or wire whisk, incorporating them with a top-to-bottom motion until well blended. Then with 1 tbsp, let’s fold the melted butter and almond extract into the batter and spread the batter evenly over the pineapple in the skillet.

Finally, with the oven already preheated, we are going to bake, to know if it is ready and just insert a toothpick in the center, and it comes out clean, 30 to 35 minutes. Once baked, loosen the edges of the cake with a table knife before inverting it onto a serving plate. Allow the cake to cool for approximately 5 minutes before serving.
