Chili Ingredients for Cold Days:

  • 2 pounds of ground chicken
  • 3 (15 ounce) cans pinto beans, rinsed and drained
  • 2 onions, halved and thinly sliced
  • 1 (14.5 oz) can cooked Mexican-style tomatoes with chili, undrained
  • ½ cup of water
  • 2 tablespoons prepared mustard
  • 2 teaspoons of salt
  • ¼ teaspoon ground black pepper
  • 2 spoons of brown sugar
  • 2 tablespoons chili powder
  • 1 (14.5 oz) can diced tomatoes with juice
  • 2 spoons of vinegar
  • 1 spoon of vegetable oil

Method of preparation:

First heat the vegetable oil in a soup pot over medium heat. Then cook and stir the ground chicken in the hot oil until no longer pink and the chicken is crumbly, about 10 minutes. Drain.

After that mix the beans, onion, diced tomatoes, Mexican-style cooked tomatoes, water, brown sugar, chili powder, vinegar, mustard, salt and black pepper; bring to a boil. Then reduce the heat to low, cover and cook the bell pepper until thickened and the flavors blend, about 3 hours. Thereafter stir occasionally and add more water if necessary.
