Mashed Potatoes Ingredients:
- 1 ½ pounds small yellow-fleshed potatoes
- ¼ cup olive oil
- 2 spoons of balsamic vinegar
- 1 teaspoon butter at room temperature
- ½ teaspoon dried sage
- ½ teaspoon ground thyme
- ½ teaspoon ground black pepper
- 1 teaspoon dried rosemary
- ½ teaspoon sea salt
- 3 garlic cloves, minced
- ½ teaspoon dried salted
Preparation method:
First put the potatoes in a pan. After that fill with water to cover the potatoes and let it boil. After that reduce the heat to a simmer and cook the potatoes until tender but not mushy, about 20 minutes. Then drain and let the potatoes cool.
After that while the potatoes cool, mix the olive oil, balsamic vinegar, butter, garlic, rosemary, sage, thyme, savory, salt and pepper in a bowl. Then stir with a fork to combine well.
Then preheat the oven to 450 degrees F (230 degrees C). then line a baking sheet with parchment paper.
After that place the cooled potatoes in a single layer on the prepared baking sheet. Then use a clean dish towel to lightly press the potatoes and crush them. Then pour the oil and herb mixture over each potato.
Finally bake in the preheated oven until crispy, about 25 minutes. Then let it cool down a bit before serving.
