Upside Down Rhubarb Cake Ingredients:

  • 1 (3 ounce) package strawberry-flavored Jell-O® mix
  • 3 tablespoons quick-cooking tapioca
  • 1 (18.25 ounce) package white cake mix
  • 4 cups chopped rhubarb
  • 1 cup white sugar
  • 1 cup water
  • ⅓ cup vegetable oil
  • 3 eggs

Preparation method:

First, we will preheat the oven to 350 degrees F (175 degrees C). In a 9×13 inch baking pan, we will grease.

Then in a bowl mix together the sugar, rhubarb, strawberry gelatin mixture and tapioca. Then, on the bottom of the already prepared mold, we will spread the rhubarb mixture.

Then in a large bowl, beat the vegetable oil, white cake mix, eggs and water until moist; beat with an electric mixer on medium speed for about 2 minutes. We will pour the cake batter on top of the rhubarb mixture.

Finally, bake in the preheated oven, about 35 minutes, insert a toothpick in the middle of the cake layer, if it comes out clean and it is ready. Finally, before inverting it onto a plate, let the cake rest for about 5 to 10 minutes.
