Broccoli Soup Ingredients:
- 2 tablespoons butter
- 1 small onion, chopped
- 1 medium butternut squash – peeled, seeded, and cubed
- 1 (32 fluid ounce) container chicken stock
- salt and freshly ground black pepper to taste
- 1 stalk celery, chopped
- 1 medium carrot, chopped
- 2 medium potatoes, cubed
Preparation method:
Let’s start by gathering all the ingredients. Then in a medium saucepan over medium heat, melt 2 tablespoons of the butter. Then sauté the celery and onion and until tender.
Soon after, add the broccoli and broth, cover and cook for about 10 minutes.
Then put the soup in a blender, filling the jar halfway. Now, with a folded tea towel, hold the lid of the blender and gently turn the blender on, using a few quick pulses to get the soup moving before puréeing it. Beat in parts until smooth and place in a clean pan. Alternatively, if you prefer, you can use an immersion blender and purée the soup right in the pot.
To finish, using a small saucepan over medium to medium-low heat, melt 3 tablespoons of the butter, stir in the flour and add the milk. Finally, stir well until thickened and bubbling, then add to the soup. Now season with pepper and serve while still hot.
