Old-Fashioned Coconut Cream Pie Ingredients:

  • 1 cup sweetened flaked coconut
  • 3 cups half-and-half
  • ¾ cup white sugar
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 (9 inch) pie shell, baked
  • 1 cup frozen whipped topping, thawed

Preparation method:

Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. Spread the coconut evenly on the prepared baking sheet.

Place the baking sheet in the preheated oven and bake for about 5 minutes, or until the coconut turns golden brown. Stir occasionally to ensure even browning. In a medium-sized pot, combine half-and-half, sugar, flour, eggs, and salt.

Over low heat, bring the mixture to a boil while stirring constantly. Continue cooking and stirring for an additional 2 minutes.

Remove the pot from the heat and add 3/4 cup of the toasted coconut and vanilla to the custard mixture. Set aside the remaining toasted coconut for later use as a garnish. Pour the custard into a pie shell and refrigerate until firm, approximately 4 hours.
