Blueberry Muffin Ingredients:
- 1 ½ cups wheat flour
- ¾ cup white sugar
- 2 tea spoons of baking powder
- ⅓ cup vegetable oil
- 1 egg
- ⅓ cup milk, or more as needed
- 1 cup of fresh blueberries
- ½ teaspoon of salt
Crumb Coverage:
- ¼ cup butter, cubed
- 1 ½ teaspoons cinnamon powder
- ½ cup white sugar
- ⅓ cup wheat flour
Method of preparation:
Muffins: First mix the flour, sugar, baking powder and salt in a large bowl.
After that pour the oil into a small liquid measuring cup. Then add enough egg and milk to reach the 1 cup mark; stir until combined. After that pour in the flour mixture and mix just until the dough is combined. Then fold in the blueberries; reserve the dough.
Crumb Topping: Start by mixing the sugar, flour, butter, and cinnamon together in a small bowl. Mix with a fork until crumbly.
Then pour the batter into the prepared muffin tins, filling them to the top.
Then sprinkle with crumb topping.
Finally bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes.
