Soft cornmeal cake baked in the oven

To make the soft cornmeal cake, we will need all-purpose flour, cornmeal, sweetened condensed milk, milk, eggs, coconut milk, butter, and baking powder. We will blend all the ingredients in a blender until we obtain a homogeneous cream. Pour it into a greased and floured pan and bake it in a preheated oven at 180 °C for 50 minutes or until it turns golden brown. Perform the toothpick test – if it comes out clean and slightly moist, your soft cornmeal cake is ready!

Soft cornmeal cake baked in the oven Ingredients:

  • ¼ cup all-purpose flour
  • ¼ cup fine cornmeal
  • 1 can of sweetened condensed milk
  • 1 can (using the condensed milk can as a measure) of milk
  • 4 eggs
  • 1 bottle of coconut milk (200ml)
  • 2 tablespoons of unsalted butter (slightly melted)
  • 1 tablespoon of baking powder

Preparation method:

First, put the eggs, sweetened condensed milk, milk, coconut milk, butter, all-purpose flour, cornmeal, and baking powder in the blender.

Blend for about 2 minutes until you obtain a homogeneous cream.

Then, pour the mixture into a greased and floured round pan (20 cm in diameter). Bake it in a preheated oven at 180°C for 50 minutes or until it turns golden brown.

After that, take it out of the oven and let it cool completely at room temperature for around 3 hours.

Finally, once it is completely cool, run a knife along the edges and transfer it to a serving dish. And now, you just have to indulge in this wonderful soft cornmeal cake. Enjoy your meal!
