Blueberry Muffins Ingredients:

Muffins:

  • ½ teaspoon salt
  • ⅓ cup vegetable oil
  • 1 egg
  • ⅓ cup milk, or more as needed
  • 1 cup fresh blueberries
  • 1 ½ cups all-purpose flour
  • ¾ cup white sugar
  • 2 teaspoons baking powder

Crumb Topping:

  • ⅓ cup all-purpose flour
  • ¼ cup butter, cubed
  • 1 ½ teaspoons ground cinnamon
  • ½ cup white sugar

Preparation method:

First heat the oven to 200 degrees C. After that grease 8 muffin tins or line them with paper liners.

After that for the muffins: Start by mixing the flour, sugar, baking powder and salt in a large bowl.

Then pour the oil into a small liquid measuring cup. Then add enough egg and milk to reach the 1 cup mark; stir until combined. Then pour in the flour mixture and mix just until the dough is combined. After that fold the blueberries, then leave the dough reserved.

Crumb Topping: Next, combine the sugar, flour, butter, and cinnamon in a small bowl. After that mix with a fork until it’s crumbled.

Then pour the batter into the prepared muffin tins, filling them to the top. After that sprinkle with crumb topping.

Finally, bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes.
