1) We will start by heating the oven to 180°C (gas mark 4). Lightly grease an 18cm (7in) round cake pan with a little extra butter or margarine and cut a piece of parchment paper or non-stick parchment paper to fit the bottom of the pan.
2) Then place all ingredients in a large bowl and beat with a wooden spoon or hand mixer for 1 minute, or until incorporated. Remember it’s important not to beat the dough too much – just long enough to make it smooth.
3) Soon after, pour or pour the mixture into the tin, smooth the top and bake on the middle shelf of the oven for about 45-50 minutes. The cake is cooked when it is well risen and golden; the top should bounce back when tapped lightly with your fingertip. You can also try inserting a toothpick into the center of the cake – it should come out clean.
4) Finish by letting the cake rest in the pan for 5 minutes, then gently run a knife around the edge and turn it out onto a wire rack to cool. It can now be served sprinkled with icing sugar.
