Baked Blueberry French Toast Ingredients:

  • 1 loaf sourdough bread cut into 1-inch cubes
  • 1 1/2 cups fresh blueberries
  • 1 1/2 cups milk
  • 3 large eggs
  • 3 tablespoons honey or maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • pinch of salt

STREUSEL TOPPING:

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter diced
  • confectioner’s sugar for dusting, optional

Method of preparation:

First we will preheat the oven to 350º F. Spray the 9×13 baking sheet with nonstick spray or grease the baking sheet. Then arrange half of the bread cubes on the baking sheet covered with half of the blueberries. Now let’s repeat with the rest of the bread cubes and blueberries and set aside.

Combine the milk, eggs, honey, vanilla, cinnamon and salt in a medium bowl and pour over the bread and blueberries.

Then mix the flour, brown sugar, cinnamon and butter until well combined. Crumble over bread and blueberries and bake until firm and golden, about 40 minutes.

Finally we will remove from the oven and sprinkle with icing sugar, if using. Serve hot with maple syrup.
