Zuppa Toscana Ingredients:

  • 1 ¼ teaspoons red pepper flakes
  • 4 slices of bacon, cut into 1/2-inch pieces
  • 1 large onion, diced
  • 1 tablespoon minced garlic
  • 6 cups chopped fresh kale
  • 1 cup heavy cream
  • 8 ¾ cups chicken broth
  • 6 potatoes, thinly sliced
  • 1 pound light bulk Italian sausage

Method of preparation:

First cook and stir the Italian sausage and red pepper flakes in a Dutch oven over medium-high heat until the sausage is browned and crumbly, 10 to 15 minutes. after that transfer the sausage mixture to a bowl.

Then stir the bacon in the same Dutch oven and cook over medium heat until the bacon is crispy, about 10 minutes. Then drain the fat, leaving a few tablespoons of drippings in the Dutch oven.

After that mix the onion and garlic in the bacon; cook and stir until onions are soft and translucent, about 5 minutes. Then pour the chicken broth into the bacon mixture; bring to a boil. After that mix the potatoes and cabbage in the broth; cook until the potatoes are tender and the soup is flavorful, about 15 minutes.

Lastly stir the sausage and heavy cream into the soup, reduce the heat to medium and cook until the soup is heated through, about 5 minutes more.
